Tex-Mex Cheesy Beef Quiche is a creamy and cheesy Southwestern quiche recipe filled with deliciously seasoned ground beef, sweet tomatoes, and a hint of green chilies.
Prep. Preheat oven to 375˚F and lightly grease a 9-inch pie plate with cooking spray and line it with a pie crust; set aside.
Brown the beef. Cook the ground beef in a skillet until browned, about 6 to 8 minutes; drain fat.
Add the vegetables. Stir in the green onions, canned tomatoes, salt, pepper, and chili powder; set aside.
Prep the egg mixture. In a large mixing bowl, whisk together the eggs, water, cream cheese, and nutmeg; whisk until well combined.
Bake. Spoon the ground beef mixture into the pie crust. Pour the egg mixture over the beef and top with shredded cheese. Bake for 35 to 40 minutes or until set.
Serve. Remove the quiche from the oven and let it rest for 5 minutes before cutting and serving.
