Grilling corn on the cob is the easiest way to get that perfect char and smoky flavor. Add feta and chives compound butter for a next-level summer side dish.
salt and freshly ground black pepper to taste, optional
Instructions
Prep. Preheat the grill to medium heat.
Grill the corn. Place the corn on the grill; cover the grill and cook for 15 to 20 minutes, turning the corn every 5 minutes, until the kernels are tender. Remove from the grill and let it cool for 5 minutes. When slightly cooled, pull the husks away from the corn and remove the silk strings. Set aside.
Make the compound butter. In a mixing bowl, combine the softened butter, feta cheese, chives, red pepper flakes, salt, and pepper; mash and mix until thoroughly incorporated.
Finish and serve. Spread the compound butter over the corn and serve.
Notes
You'll end up with leftover butter - use it as you wish, but it's great on top of grilled meat, especially steaks.
