1butternut squash(about 3-pounds), peeled, seeded and cut into 2-inch cubes
4tablespoonsbutter
2clovesgarlicfinely chopped
¼cuppanko crumbs
2tablespoonsolive oil
1cupshredded white cheddar cheese
½cupshredded parmesan cheese
salt and freshly ground black pepperto taste
chopped fresh parsleyfor garnish
Instructions
Preheat the oven to 375˚F.
Coat a 9x13 casserole dish with cooking spray and set aside.
Melt the butter in a frying pan. Reduce the heat to low and add the garlic; cook and stir very frequently until the garlic is soft, about 1 minute. Remove from heat.
Place the panko crumbs in a bowl. Drizzle the garlic mixture over the crumbs, toss to combine, and set aside.
Toss the chunks of butternut squash with olive oil; add the cheeses and mix until well combined, then season with salt and pepper. Transfer to the baking dish and sprinkle the top with the panko crumbs.
Bake uncovered for 40 to 45 minutes or until the squash is tender and lightly browned.
Remove from oven, garnish with parsley, and serve.
