Shrimp Guacamole Bites feature crispy tortilla chips topped with guacamole and juicy cajun shrimp! It's a delicious shrimp appetizer that's perfect for summer cookouts or game day parties.
Season the shrimp. Place the cleaned shrimp in a large bowl and add paprika, cayenne pepper, thyme, oregano, garlic powder, salt, and pepper; mix to combine.
Cook the shrimp. Heat the oil in a large nonstick skillet over medium-high heat. Add the shrimp to the skillet and cook for about 2 to 3 minutes or until the shrimp is pink and no longer transparent. Remove from heat and set them aside.
Make the guac. Prepare the guacamole or use store-bought.
Assemble and serve. Lay out the tortilla chips and spread guacamole over each chip. Top with the prepared shrimp. Serve immediately.
Notes
If you’d like to make the shrimp ahead of time, let them cool completely after cooking. Then store them in an airtight container or wrap tightly with plastic wrap and foil. Keep them in the fridge for up to 3 days.
