Banana Oats Chocolate Chip Cookies

Ingredients

  • 2 very ripe bananas
  • 1-1/2 cups quick oats
  • 1 tablespoon honey
  • 1/4 teaspoon cinnamon (optional)
  • 1/2 cup mini chocolate chips , divided

Instructions

  1. Preheat oven to 350.
  2. Line a baking sheet with parchment paper; set aside.
  3. In a mixing bowl, mash bananas until smooth.
  4. Add oats, honey, cinnamon if using, and half of the mini chocolate chips; mix until thoroughly combined.
  5. Drop dough by large tablespoons onto previously prepared baking sheet.
  6. Slightly flatten each cookie.
  7. Add remaining mini chocolate chips, resting them on top of the cookies with light pressure.
  8. Transfer pan to freezer for 10 minutes.
  9. Remove from freezer and bake cookies for 12 to 15 minutes, or until slightly browned on the edges.
  10. Remove from oven and let stand 2 minutes.
  11. Transfer to cooling racks.
  12. Let cool before serving.
