For the Salad

  • 1 bag (6 to 8 ounces) fresh baby spinach
  • 2 cups fresh blackberries
  • 1 cup slivered almonds
  • 1/2 cup dried cranberries
  • 1/4 cup shredded Parmesan cheese

For the Lemon Poppyseed Dressing

  • 3 tablespoons extra virgin olive oil
  • juice of 1 whole lemon (about 3 to 4 tablespoons lemon juice)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/2 tablespoon poppyseeds


  1. Combine all salad ingredients in a bowl and mix lightly; set aside.

  2. Combine all dressing ingredients in a small mixing bowl and whisk until thoroughly combined.
  3. Pour the dressing over the salad and toss to coat.
  4. Serve.
