Ingredients
For the Salad
1bag (6 to 8 ounces)fresh baby spinach
2cupsfresh blackberries
1cupslivered almonds
1/2cupdried cranberries
1/4cupshredded Parmesan cheese
For the Lemon Poppyseed Dressing
3tablespoonsextra virgin olive oil
juice of 1 whole lemon (about 3 to 4 tablespoons lemon juice)
1teaspoonlemon zest
1/2teaspoondijon mustard
1/2teaspoonhoney
1/4teaspoonsalt
1/2tablespoonpoppyseeds
Instructions
Combine all salad ingredients in a bowl and mix lightly; set aside.
Combine all dressing ingredients in a small mixing bowl and whisk until thoroughly combined.
