Ingredients
6cupsfresh baby spinach leaves OR salad mix
1cupsliced strawberries
1cupraspberries
1cupblueberries
1largeavocado,diced
1/3cupdry roasted sunflower seeds
4ounces feta cheese,crumbled
For the Poppy Seed Dressing
1/4cupextra virgin olive oil
1lemon,juiced
1/2teaspoondijon mustard,to taste
1/2teaspoonhoney
1/4teaspoonsalt
1/2tablespoonpoppy seeds
Instructions
Place baby spinach in a salad bowl.
Top spinach with prepared strawberries, raspberries, blueberries, diced avocado, sunflower seeds, and crumbled feta.
In a small mixing bowl, whisk together oil, lemon juice, mustard, honey, salt, and poppy seeds.
Pour dressing over salad and gently mix it all together.
