What You'll Need

Sausage & Ground Beef Panko Bread Crumbs Egg Butter Olive Oil Onion Carrots Celery Salt and Pepper Garlic Italian Seasoning Chicken Broth Acini de Pepe pasta Baby Spinach Parmesan

Make the Meatballs

Mix the meatball ingredients in a bowl.  Roll into 1-inch balls and place on a plate.

Cook Vegetables

Melt the butter and olive oil in a large pot.  Add the onion, carrots, and celery and cook for 3-4 minutes.

Add Garlic

Season with salt and pepper and Italian Seasoning.  Add the garlic and cook for 20-30 seconds.

Pour in Broth

Pour in the broth and gently use a wooden spoon to scrape the bottom for any browned bits. 

Add Meatballs

Add the meatballs and pasta to the pot, and bring to a boil.  Reduce heat and simmer for 10-15 minutes.

Finish and Serve

Add the spinach and stir until wilted.  Season with salt and pepper, top with parmesan, and serve.
