is pork loin the same as tenderloin?

No! Pork loin is a much leaner cut of meat that doesn’t have to be boneless. On the other hand, pork tenderloin tends to be slightly fattier because it’s a muscle.

What You'll Need

- Pork Tenderloin - Salt & Pepper - Olive Oil - Honey - Fresh Garlic - Dijon Mustard - Fresh Thyme Leaves - Fresh Rosemary

Prep the Potatoes

Toss the potatoes in olive oil, salt and pepper.  Arrange on a baking sheet and bake for 35 minutes.

Make the Sauce

In a small bowl, mix the honey, garlic, mustard, thyme and rosemary until well-combined.

Prep the Pork

Rub the pork with salt and pepper and place it in the center of the baked potatoes.  Brush all sides with the honey mixture.

Roast

Pour the remaining honey mixture over the potatoes and mix well. Roast for about 20 minutes until the pork is done.

Enjoy!

Let the pork rest for 10 miutes before slicing and serving. Garnish with fresh parsley.
