what kind of lobster tails are best?

In general, cold-water lobster is considered the best quality (and the prices reflect that!). Lobster from cold water areas tends to be sweeter and firmer.  Most importantly, look for lobster that is frozen, uniform in color, and from a reputable seller.

What You'll Need

Lobster Tails Butter Salt & Pepper Shallots and Garlic Parsley Cream Parmesan Lemon Juice Lemon Wedges

Cut the shells open

Thaw your lobster tails if frozen.  Place on a cutting board and cut the top open with kitchen shears, stopping at the tail fins.

Butterfly the Lobster

Pull the shell halves apart and run a spoon between the shell and the meat to loosen it.  Cut a slit down the center of the meat.

Season and Cook

Brush the lobster tails with melted butter and season with salt and pepper.  Air fry for 5-7 minutes or until done.

Sauté the Aromatics

While the lobster is cooking,  melt the remaining butter in a skillet. Add the shallots, followed by the garlic and parsley.

Make the Sauce

Lower the heat, and add the cream.  Stir in the parmesan, simmer for a minute, then add the lemon juice, salt and pepper.

Top the lobster tails with the cream sauce and serve.  Pair with a couple simple sides for an elegant lobster dinner!
