Peach and Thyme Mimosas are delicious cocktails made with thyme-flavored syrup, juicy peaches and champagne. It's the perfect easy drink recipe for brunch!

Ingredients
1/2-cupwater
1/3-cupsugar
2sprigs fresh thyme
2peaches, peeled, pitted, quartered (if the peaches are too large, use just one)
Champagne
Instructions
In a small saucepan, combine water, sugar, and sprigs of thyme.
Bring mixture to a boil; lower to a simmer and continue to cook for 5 minutes.
Remove from heat, stir, and completely cool in the refrigerator; about 15 minutes.
Remove sprigs of thyme and pour the syrup into a blender.
Add the peaches; puree mixture until combined and smooth.
Divide the peach-mixture evenly between 4 glasses.
Pour Champagne into each glass.
Serve.
