These homemade pumpkin protein muffins are moist, fluffy, and high in protein due to vanilla whey powder, Greek yogurt, and eggs. They're also packed with pumpkin purée, maple syrup, and cinnamon spice. The perfect fall treat!

Instructions
Prep. Preheat the oven to 350˚F. Line a 12-cup muffin pan with paper liners or lightly grease the cups. Set aside.
Combine the dry ingredients. In a large bowl, whisk together the all-purpose flour, whole wheat flour, protein powder, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt.
Mix the wet ingredients. In a separate bowl, whisk together the pumpkin puree, eggs, Greek yogurt, brown sugar, maple syrup, melted butter, and vanilla until smooth.
Make the batter. Pour the wet ingredients into the dry ingredients and gently fold together just until no dry streaks remain. Do not overmix.
Bake. Divide the batter evenly among the prepared muffin cups, filling each about ¾ full. Sprinkle with coarse sugar and/or pepitas, if using. Bake for 20–24 minutes, or until the tops spring back lightly and a toothpick inserted into the center comes out with a few moist crumbs.
Cool and serve. Remove the pumpkin muffins from the oven and let them cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
Notes
Use vanilla whey protein for the softest texture and best flavor.
If using unflavored whey protein, increase the brown sugar to ½ cup for a better flavor.
Avoid overbaking, as protein powder can dry out baked goods.
You can add chocolate chips to the batter if you want.
