Juicy, golden honey beer chicken thighs are smothered in a sticky-sweet honey beer sauce. This easy one-skillet dinner is packed with savory flavor and ready in about 30 minutes!
Prepare the chicken. Season the chicken thighs with oregano, thyme, garlic powder, paprika, salt, and pepper. Rub the seasoning into the thighs so it sticks.
Cook. Heat the olive oil in a 12-inch skillet set over medium heat. Add the chicken thighs to the heated oil and cook for 5 to 6 minutes, or until the chicken flips over easily and is golden brown on the bottom.
Continue cooking. Flip the chicken and cook for 6 to 8 more minutes, or until done and the internal temperature reaches 165˚F. Remove the cooked thighs from the skillet and set aside.
Sauté the aromatics. Return the skillet to the burner and increase the heat to medium-high. Add a little more oil if needed. Add the shallots to the skillet and cook for 1 minute, stirring frequently. Stir in garlic and cook for 20 seconds.
Add the remaining ingredients. Whisk in the beer, soy sauce, mustard, and honey; increase the heat to High and bring the mixture to a boil while stirring up all the browned bits from the bottom of the skillet. Continue cooking for 3 minutes, or until the liquid is reduced.
Combine. Return the chicken thighs to the skillet and turn to coat with the sauce.
Serve. Remove from heat. Garnish the thighs with parsley and serve.
