This homemade granola recipe with rolled oats, maple syrup, and brown sugar is sweet, crunchy, and easy to prep in 5 minutes. Make a big batch in the oven and keep it in the pantry for weeks!
Prepare to bake. Heat the oven to 300ºF. Line a large baking sheet with parchment paper and set aside.
Make the base. Combine the coconut oil, maple syrup, brown sugar, vanilla, and salt in a large bowl.
Add the dry ingredients. Fold in the oats, coconut flakes, mixed nuts, and blueberries. Stir well to combine.
Bake the granola. Spread the prepared mixture over the baking tray. Press it down with a spatula. Bake the granola for 10 minutes. Remove from the oven, stir, and press again. Bake for another 10 minutes. Finally, remove the granola, stir it one last time, and press down with a spatula. Bake for 5-7 minutes.
Let it cool. Remove from the oven. The granola will harden as it cools.
Serve. Serve with milk. Store in an airtight container.
Notes
You can use coconut chips instead of coconut flakes.
For a more tropical vibe, stir in dried pineapple or banana chips.
Choose any nuts you like. I went with walnuts, almonds, and pecans.
For a chocolate granola, stir in chocolate chips, but only once the granola is cooled down.
