Instructions
Season the chicken pieces with salt and pepper.
Heat the olive oil in a large nonstick skillet. Then, brown the drumsticks on all sides, about 2 to 3 minutes per side. Remove it from the skillet and set aside.
Melt the butter in the same skillet. Add the diced onion and cook over medium-high heat for 2 minutes; stir in the garlic and continue to cook for about 15 seconds or until fragrant.
Stir in the orzo pasta; cook for 2 minutes, stirring frequently. Add in the chicken broth and stir to combine.
Arrange the chicken drumsticks over the orzo. Add the tomatoes and spinach on top; season everything with salt and pepper, and bring the mixture to a boil.
Lower the heat to a simmer, cover, and and cook until the orzo has completely absorbed the liquid and the chicken is cooked through, about 12 to 15 minutes.
Remove from heat, sprinkle with parmesan, cover, and let it rest for several minutes.
