These super easy Black Bean Burgers are the best vegetarian burger substitute ever! They're flavorful with the perfect texture for that classic burger feel.
2cupscanned reduced-sodium black beansrinsed and drained
1cuppanko crumbs
1smallyellow oniongrated
1largeegg
1teaspoonItalian seasoning
½teaspoongarlic powder
½teaspoononion powder
½teaspoonchili powder
½teaspoonground cumin
salt and fresh ground black pepperto taste
2tablespoonsvegetable or canola oil
4slicescheeseI like to use Swiss cheese
mayonnaiseoptional, for serving

Instructions
Mash the beans. Add the black beans to a mixing bowl and mash with a fork or a potato masher until mushy, but still have some whole bean pieces.
Add the seasonings. To the bean mixture, add the panko crumbs, onion, egg, Italian seasoning, garlic powder, onion powder, chili powder, ground cumin, salt, and pepper; mix until well combined. If the mixture is dry, stir in a bit of water. Set the mixture aside for 5 to 10 minutes.
Prep. Preheat a large cast-iron skillet over medium-high heat. Add the cooking oil and swirl it around.
Make the patties. Divide the bean mixture into 4 equal balls and shape each ball into a patty.
Cook. Transfer the bean patties to the hot oil and cook for 4 minutes per side, or until browned. Add a slice of cheese to each burger and cook for 1 minute longer, or until the cheese is melted.
Serve. Remove from the heat and let them rest on a plate for 3 to 5 minutes. Then serve the black bean burgers on toasted buns or on Bibb lettuce leaves with mayonnaise, lettuce, and tomatoes.
