Cut the chicken into bite-sized pieces. Mix the cornstarch and spices in a bag, then add the chicken and shake to coat.
Heat the oil over medium-high heat. Add the chicken and cook for 5 minutes, until golden brown and crispy on all sides.
Set the chicken aside, then heat another tablespoon of oil in the pan. Add the bell pepper, then the onions and bok choy.
Stir together the soy sauce and honey. Add the chicken back to the pan, mix in the sauce and cook a couple minutes more.
Serve over rice, garnished with green onions, sesame seeds, and cilantro. It's a satisfying meal all in one bowl!
