why brine chicken?

This recipe starts out with brined chicken, which is an easy process!  Simply soak the raw chicken breasts in a salt-water brine for 20-30 minutes before using.  This simple step makes the chicken extra juicy and tender. 

What You'll Need

Chicken Breast Salt and Water (for brining) Olive Oil Salt & Pepper Spices Dried Herbs Fresh Parsley

Prep the Chicken

Remove the chicken from the brine, and rinse under cold water.  Pat dry, rub with olive oil, and place in a 9x13 baking dish.

Make the Seasoning

In a small bowl, combine all of the spices and stir to distribute evenly.

Season the Chicken

Rub the seasoning all over the chicken and lay each piece back in the baking dish.

Bake

Bake the chicken at 425 degrees for about 22 minutes.  Use a meat thermometer to check for doneness.
