Caprese Salad mixed with greens and berries, tossed with a homemade, light balsamic vinaigrette.

Ingredients
  

For the Salad
  • 4 to 6 cups salad greens
  • 2 cups mixed berries raspberries, blueberries, strawberries...
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella sliced
  • 3 to 4 basil leaves sliced into thin ribbons
  • 1 cup halved pecans
For the Balsamic Vinaigrette Dressing
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon garlic powder
  • salt and fresh ground pepper to taste

Instructions
 

  • In a large serving bowl, combine all the salad ingredients and set aside.
  • In a separate mixing bowl, whisk together all the dressing ingredients; whisk until well incorporated.
  • Add the vinaigrette dressing to the salad; toss to combine.
  • Serve.
