Ingredients

  • 3 tablespoons olive oil
  • 1- pound brussels sprouts , trimmed
  • 1 large red onion , thinly sliced
  • salt and fresh ground pepper , to taste
  • 1 teaspoon sugar
  • 1/2 cup pistachios , cleaned, peeled, and coarsely chopped
  • 1 lime , juiced
  • 1 avocado , peeled and cubed

Instructions

  1. Heat olive oil in a nonstick pan and over medium heat.
  2. Cut brussels sprouts in half and thinly slice; they will look shredded.
  3. Add brussels sprouts and onion to the pan.
  4. Season with salt and pepper; saute for 3 to 4 minutes, or until tender.
  5. Stir in sugar, pistachios, and lime juice.
  6. Continue to cook for 2 more minutes.
  7. Remove from heat.
  8. Gently mix in avocado chunks.
  9. Serve immediately.
