Cucumber Mojito

A delicious and refreshing twist on the classic mojito cocktail made with the addition of cucumbers.

Ingredients
  

  • 2 cups water
  • 2 cups sugar
  • Ice
  • 10 cucumber slices
  • 1/4 cup fresh mint leaves
  • 4 ounces (2 shot glasses) white rum
  • 2 limes, juiced
  • 4 ounces seltzer water
  • cucumber slices for garnish

Instructions
 

  • Make a simple syrup by combining the water and sugar in a small saucepan; bring to a boil.
  • Stirring occasionally, continue to boil for 5 minutes, or until sugar is dissolved.
  • Remove from heat; set aside and let cool.
  • Fill two glasses with Ice and set aside.
  • Using a muddler, muddle cucumber slices and mint leaves in a cocktail shaker.
  • Add rum, lime juice and 4 ounces simple syrup.
  • Shake and mix well.
  • Add seltzer water to the shaker.
  • Divide mixture evenly in prepared glasses.
  • Garnish with cucumber slices.
  • Serve.

Notes

Store the remaining Simple Syrup covered and in the refrigerator for up to 1 month.
