  • 2 pounds green asparagus stalks
  • 2 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • salt and fresh ground pepper, to taste
  • 2 cloves garlic, minced
  • 5 cups low sodium vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh lemon juice, or to taste
  • chopped fresh parsley, for garnish


  1. Trim asparagus by snapping off the tough ends. Discard ends.
  2. Cut stalks of asparagus into 1-inch pieces; set aside.

  3. Heat up 1 tablespoon butter and 1 tablespoon olive oil in a 4-quart, or bigger, Dutch oven or soup pot.

  4. Stir in onions and cook for 1 minute.

  5. Add asparagus pieces; stir in minced garlic and season with salt and pepper. Continue to cook for 5 minutes, stirring often.

  6. Add vegetable broth and bring to a boil; lower heat to a simmer, cover with a lid, and continue to cook for 12 to 14 minutes, or until asparagus is soft.

  7. Remove lid and puree soup with an immersion blender, OR, purée soup in batches in a regular blender until completely smooth.

  8. Pour blended soup back into the pot and set over medium-high heat.

  9. Whisk in heavy cream and lemon juice.

  10. Bring soup to a slow boil and whisk in remaining tablespoon of butter.

  11. Remove from heat; taste soup and adjust accordingly.

  12. Sprinkle with parsley and serve.
