Zucchini Goat Cheese Pizza

This zucchini goat cheese pizza is an easy vegetarian pizza recipe baked on a homemade crust and topped with ripe tomatoes, garden zucchini, red onions, and tangy goat cheese.

Ingredients
  

For the Pizza Dough
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • teaspoon salt
  • 4 tablespoons butter, cut into 4 cubes
  • ½ cup milk
For the Toppings
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ small red onion, thinly sliced
  • 2 small zucchini, thinly sliced
  • salt and pepper, to taste
  • ½ cup pizza sauce
  • 1 can (15 ounces) diced tomatoes, well drained
  • 1 cup crumbled goat cheese

Instructions
 

For the Pizza Dough
  • Place flour, baking powder, and salt in a food processor and pulse 3 times (see recipe notes below if you're making your dough by hand).
  • Add butter and run the food processor until the mixture resembles breadcrumbs. Gradually add in the milk, just enough to form a soft dough. You may need to use less or slightly more than a 1/2 cup.
  • Lightly grease a baking sheet with cooking spray; set aside.
  • Flour your work area and knead the dough for one minute. Roll it out and form a 10-inch round. Place the dough on the baking sheet and set aside.
For the Pizza
  • Preheat the oven to 425ºF.
  • Heat olive oil in a pan and add garlic, onion, and zucchini. Season with salt and pepper and cook for a few minutes, or until softened, stirring occasionally, and then remove from heat.
  • To assemble the pizza, spread the pizza sauce onto the dough. Add drained diced tomatoes. Top with the zucchini mixture, then sprinkle the goat cheese over the zucchini.
  • Bake for 20 to 25 minutes, or until the pizza dough is golden brown.
  • Remove from oven and let it rest for a few minutes before cutting and serving.

Notes

  • Dough: Homemade dough offers superior taste and texture, but you can also use store-bought pizza dough.
  • If the dough is sticky, use a bit of olive oil on your hands while handling it.
  • Don't overbake; aim for a golden crust to preserve toppings and texture.
  • Toppings to try: Spinach, bell peppers, roasted squash, corn, or fresh figs.
  • Add meat like prosciutto, pepperoni, or sausage for extra protein.
  • For a white pizza variation, use soft goat cheese as the base.
  • Swap goat cheese with feta, mozzarella, or ricotta if preferred.
  • Finish with fresh basil or arugula for an herbal touch.
  • If you don't have a food processor, whisk the flour, baking powder, and salt in a medium-sized bowl. Rub in the butter with your hands until the mixture resembles a coarse meal, then gradually add the milk as directed, mixing to form a soft dough.
