  • 3/4- cup Whole Wheat Flour
  • 1-1/2 cups All-Purpose Ultragrain Flour (You can also use regular all-purpose flour)
  • 1 teaspoon salt
  • 3/4- cup lukewarm water
  • 1 tablespoon active dry yeast
  • 1 teaspoon sugar
  • 3-1/2 tablespoons extra virgin olive oil
  • 1 tablespoon water


  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chopped fresh basil
  • 1/2 teaspoon dried oregano
  • 1 garlic clove , minced
  • fresh ground pepper , to taste
  • 1 cup tomato/pizza sauce (use your favorite)
  • 1 whole tomato , sliced into thin rounds (I used vine-ripened tomatoes)
  • 3/4- cup part skim shredded mozzarella cheese
  • 1/4- cup grated parmesan cheese
  • crushed red pepper , to taste


  1. In your mixer's bowl, combine flours and salt; whisk to combine and set aside.
  2. In a small mixing bowl, combine water, yeast, and sugar; stir and let stand 5 minutes, or until foamy.
  3. With your stand mixer on low, gradually add the yeast mixture to the flour mixture.
  4. Add olive oil and continue to mix until the dough looks shaggy.
  5. Attach the dough hook to your mixer and continue to mix at medium speed for 5 minutes. At this point, if dough seems dry, add a little bit of water at a time, up to 1 tablespoon and continue to mix until combined.
  6. Remove bowl from mixer.
  7. Oil your hands and shape the dough into a ball.
  8. Transfer the dough to a lightly greased large bowl.
  9. Cover with plastic wrap and let stand in warm area for about 1 hour, or until dough has doubled in size.
  10. Preheat oven to 400F.
  11. Press the pizza dough into a greased 10-inch skillet that's about 2-inches deep. Set aside.
  12. In a small mixing bowl, combine extra virgin olive oil, fresh basil, oregano, garlic and pepper; mix to combine.
  13. Brush the garlic mixture over the pizza dough.
  14. Spread the tomato sauce evenly over the dough.
  15. Arrange the tomatoes over the sauce.
  16. Bake for 20 minutes.
  17. Remove from oven and sprinkle with cheeses and crushed pepper.
  18. Return to oven and bake for an additional 4 to 6 minutes, or until cheese is melted.
  19. Remove from oven and let stand 10 minutes.
  20. Serve.
