  • Butter for pan
  • 2 sweet potatoes , peeled and cut into cubes
  • 3 yellow onions , sliced
  • 2 tablespoons olive oil
  • kosher salt and freshly ground black pepper , to taste
  • 1 tablespoon oregano
  • 1/2- cup to 1-cup crumbled feta cheese


  • Preheat oven to 450.
  • Butter a large baking pan or dish and set aside.
  • Add the chopped sweet potatoes, onions, and olive oil in a bowl and mix.
  • Season with salt, pepper, and oregano; mix together and place the sweet potatoes on prepared baking dish in a single layer.
  • Roast for 20 to 25 minutes, stirring once halfway through cooking, and cook until potatoes are fork tender.
  • Remove from oven and sprinkle with feta cheese.
  • Serve.
