Banana Bread filled with a sweet Ricotta mixture and baked in a deliciously rich custard.

  • 8 slices stale leftover banana bread or any other thick sliced bread (slices should be close to 1-inch thick)
  • 2 cups part skim ricotta cheese
  • 1/4 cup sugar
  • 1/2 tablespoon ground cinnamon
  • 1 cup milk
  • 3 whole eggs
  • 2 teaspoons pure vanilla extract
  • 2 cups mixed berries
  • powdered sugar (optional)


  • Preheat oven to 350.
  • Grease a 8x8 baking dish with cooking spray; set aside.
  • In a mixing bowl, combine ricotta cheese, sugar, and ground cinnamon; mix until thoroughly combined.
  • Spread ricotta mixture onto each slice of bread.
  • Place 4 bread slices, cheese-side up, in prepared baking dish.
  • Cover with remaining bread slices, cheese-side down.
  • In a large mixing bowl, whisk together milk, eggs, and vanilla until blended.
  • Pour over bread.
  • Bake for 40 to 45 minutes, or until center is set and top is golden brown.
  • Let cool for 10 minutes.
  • Top with berries and powdered sugar.
  • Serve.
