One Pot Shrimp with Orzo

Shrimp with Orzo is full of juicy shrimp, feta cheese, lemon, garlic, and black olives. It’s a hearty and delicious dish that’s very simple to make!

Ingredients
  

  • 2 tablespoons fresh lemon juice, divided
  • 1 tablespoon lemon zest
  • ½ teaspoon salt
  • ¼ teaspoon fresh ground black pepper
  • 1 pound raw large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 cups orzo
  • 4 cups chicken broth, vegetable broth is OK to use
  • ½ cup black olives, pitted and chopped
  • ½ cup crumbled feta cheese, divided
  • chopped fresh parsley, for garnish

Instructions
 

  • In a mixing bowl whisk together 1 tablespoon lemon juice, lemon zest, salt, and pepper; add in the shrimp, toss to coat, and set aside until ready to use.
  • Heat olive oil in a large 12-inch skillet set over medium-high heat.
  • Add onion and cook for 3 to 4 minutes, or until softened.
  • Stir in the garlic; cook and stir for 15 seconds.
  • Add orzo and cook for about 4 minutes, or until lightly browned, stirring frequently.
  • Stir in the chicken broth and bring to a boil.
  • Cook for 6 minutes, stirring occasionally.
  • Stir in the olives and ¼ cup feta cheese.
  • Stir in the remaining lemon juice and season with salt and pepper.
  • Nestle shrimp into the orzo; cover and cook for about 3 to 4 more minutes, or until shrimp is opaque and cooked through.
  • Remove from heat.
  • Top with remaining feta cheese.
  • Garnish with parsley.
  • Serve.
