Fresh Mango Guacamole

Made with fresh avocados, mangoes, garlic, jalapeño, and much more, this simple guacamole is full of flavors you can't resist.

Ingredients
  

  • 3 ripe avocados, halved and pitted
  • salt and fresh ground black pepper, to taste
  • 2 limes juiced
  • 1/4 cup finely diced red onion, plus a bit more for garnish
  • 1/4 cup finely diced red or orange bell pepper
  • 1/4 cup fresh cilantro, finely chopped
  • 2 cloves garlic, finely minced
  • 1 to 2 mangoes, peeled and diced into ½-inch cubes, (you can also use frozen mango chunks, but make sure to thaw them before adding to the guacamole)
  • 1 small jalapeño, finely minced (ribs and seeds removed)
  • fresh cilantro, chopped, for garnish, optional
  • tortilla chips, for serving

Instructions
 

  • Scoop the avocado flesh into a mixing bowl and mash it with the back of a fork.
  • Season the avocado with salt, pepper, and lime juice; mash to combine.
  • Stir in the red onions, bell peppers, cilantro, and garlic.
  • Add mango and jalapeno and gently stir to combine.
  • Taste for salt and pepper; adjust accordingly.
  • Garnish with diced red onions, chopped cilantro, and a handful of mango chunks.
  • Serve with tortilla chips.
