▢ 3 ripe avocados, halved and pitted ▢ salt and fresh ground black pepper, to taste ▢ 2 limes juiced ▢ 1/4 cup finely diced red onion, plus a bit more for garnish ▢ 1/4 cup finely diced red or orange bell pepper ▢ 1/4 cup fresh cilantro, finely chopped ▢ 2 cloves garlic, finely minced ▢ 1 to 2 mangoes, peeled and diced into ½-inch cubes, (you can also use frozen mango chunks , but make sure to thaw them before adding to the guacamole) ▢ 1 small jalapeño, finely minced (ribs and seeds removed) ▢ fresh cilantro, chopped, for garnish, optional ▢ tortilla chips, for serving
Scoop the avocado flesh into a mixing bowl and mash it with the back of a fork.
Season the avocado with salt, pepper, and lime juice; mash to combine.
Stir in the red onions, bell peppers, cilantro, and garlic.
Add mango and jalapeno and gently stir to combine.
Taste for salt and pepper; adjust accordingly.
Garnish with diced red onions, chopped cilantro, and a handful of mango chunks.
Serve with tortilla chips.
