Roasted Carp on a Bed of Caramelized Onions

  • 2 pounds whole carp
  • 2 pounds white onions, diced
  • salt and freshly ground black pepper, to taste
  • 2 teaspoons paprika powder
  • 4 tablespoons vegetable oil
  • 1 teaspoon all purpose flour
  • juice of 1/2 lemon


  1. Dice the onions and add them to a frying pan in which you’ve first heated the oil.
  2. Sauté the onions for about 10 – 15 minutes on medium heat until they are soft and translucent, but not brown.
  3. Add the salt, paprika and black pepper.
  4. Brush a deeper roasting pan with oil and transfer the onions to it.
  5. Place the cleaned fish over the onions.
  6. In a small bowl, whisk 1/2 cup of water with the flour and lemon juice and pour over the fish.
  7. Roast for 1 hour in a pre-heated oven at 180°C (350°F).
  8. You can add couple of tablespoons of water to the pan if your onions start to dry up while roasting.
  9. Serve with crusty bread and red wine (or beer).
