Samoa Peanut Butter Bars

Gluten free and delicious Peanut Butter Bars topped with all the sweet Samoa cookie fixings!

Ingredients

  • 4 large eggs
  • 1 cup smooth Peanut Butter
  • 1 cup semi-sweet chocolate chips , chopped, divided
  • 1 (14 oz.) bag Caramel Candies, unwrapped
  • 1 stick butter
  • 1 (14 oz.) can sweetened condensed milk
  • 1 cup sweetened shredded coconut

Instructions

  1. Preheat oven to 350.
  2. Line an 8x8 brownie pan with parchment paper; set aside.
  3. Place the eggs in your mixer's bowl and beat for 8 minutes, or until eggs have tripled in size.
  4. Heat Peanut Butter in the microwave for 1 minute.
  5. Remove and stir.
  6. Slowly pour a stream of the warm Peanut Butter over the eggs, beating until mixture is thoroughly combined.
  7. Pour batter into prepared pan.
  8. Sprinkle 3/4 of chopped chocolate chips on top of Peanut Butter mixture; set aside.

Make Caramel Sauce

  1. Combine caramels, butter and sweetened condensed milk into a saucepan.
  2. Cook over medium-low heat until melted, stirring constantly; about 5 minutes.
  3. Use 1 cup of prepared caramel sauce and spread it over the chopped chocolate chips.
  4. (Store any remaining caramel sauce in the fridge and use it as a topping for ice creams, cakes, cookies, etc...)
  5. Sprinkle shredded coconut over caramel sauce.
  6. Bake for 25 to 30 minutes, or until a toothpick inserted in the middle comes out with very few crumbs.
  7. Remove and let completely cool before cutting.
  8. Melt the remaining chopped chocolate chips and drizzle over the bars.
  9. Cut and Serve.
