Salsa Bacon and Cheese Dip Stuffed Mushrooms

Ingredients

  • 16 Baby Bella Mushrooms
  • 1 package (8-oz) cream cheese, softened
  • 4 slices thick bacon , cooked to a crisp, crumbled, reserving 1 tablespoon for garnish
  • 1 cup shredded mild cheddar cheese
  • 1/2 cup thick and chunky salsa
  • 1 teaspoon garlic powder
  • fresh ground pepper , to taste
  • 1/2 tablespoon chopped fresh parsley

Instructions

  1. Preheat oven to 325.
  2. Line a baking sheet with foil and grease with cooking spray; set aside.
  3. Clean mushrooms with a damp cloth.
  4. Remove stems and finely chop them.
  5. Transfer chopped stems to a large mixing bowl and add cream cheese, crumbled bacon, shredded cheese, salsa, garlic powder, pepper and parsley.
  6. Mix it all together until smooth and creamy.
  7. Spoon the mixture into the mushroom caps.
  8. Transfer mushrooms to prepared baking sheet.
  9. Bake for 12 to 15 minutes, or until mixture begins to melt.
  10. Remove from oven and garnish with reserved bacon.
  11. Serve.
