Ingredients

FOR THE PEANUT SAUCE

  • 1/2- cup Hellmann's Carefully Crafted Dressing & Sandwich Spread
  • 1/4- cup Natural Smooth Peanut Butter
  • 1 tablespoon Sriracha
  • 2 limes , juiced

FOR THE CHICKEN

  • 1 tablespoon vegetable oil
  • 1 red or orange bell pepper , diced
  • 2 cups cubed or shredded cooked chicken breast (I always get a rotisserie chicken for this recipe)
  • 3 green onions , chopped
  • 1 cup halved and thinly sliced red onions
  • 4 to 5 basil leaves , cut into thin ribbons
  • 8 butter lettuce leaves
  • sesame seeds , optional
  • peanuts , optional

Instructions

  1. In a small bowl, combine Hellmann's Dressing, peanut butter, sriracha and lime juice; mix and stir until thoroughly incorporated. Set aside.
  2. Heat vegetable oil in a wok over medium-high heat.
  3. Add diced peppers and cook for 2 minutes, or until tender.
  4. Add chicken and continue to cook for 1 minute.
  5. Stir in green onions; cook for 2 minutes.
  6. Remove from heat and stir in red onions, basil and HALF of the prepared peanut sauce.*
  7. To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf.
  8. Add sesame seeds and peanuts.
  9. Drizzle some of the peanut sauce over each prepared wrap.
  10. Serve.

Recipe Notes

*Store remaining peanut sauce in the refrigerator.
