Ingredients

  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 tablespoon cocoa powder
  • 1 tablespoon sugar
  • 1 tablespoon light brown sugar
  • 1/2 teaspoon pumpkin pie spice
  • pinch of nutmeg
  • 1 tablespoon canola oil
  • 1 tablespoons milk
  • 1/8 teaspoon pure vanilla extract
  • 2 tablespoons pumpkin puree (NOT pumpkin pie filling)
  • whipped cream , for garnish

Instructions

  1. In a mixing bowl, combine flour, baking powder, cocoa powder, sugar, light brown sugar, pumpkin spice and nutmeg; whisk until well combined and set aside.
  2. In a small bowl, combine oil, milk, vanilla and pumpkin puree; mix until thoroughly combined.
  3. Add pumpkin mixture to flour mixture and mix until thoroughly incorporated.
  4. Pour the mixture into an 8-ounce mug.
  5. Microwave for 75 seconds.
  6. Remove from microwave.
  7. Garnish with whipped cream.
  8. Enjoy.
