Crispy Parmesan Smashed Potatoes

Deliciously cheesy potatoes that are incredibly crispy on the outside, but soft and tender on the inside.

Ingredients

  • 3- pounds red potatoes , rinsed and dried
  • salt for the water
  • 3 tablespoons olive oil
  • 2 sprigs thyme
  • salt and fresh ground pepper , to taste
  • 1 cup shredded parmesan cheese
  • 1 teaspoon chopped fresh parsley , for garnish (optional)

Instructions

  1. Place potatoes in a large pot and add water to cover the potatoes.
  2. Season water with salt and bring to a boil.
  3. Reduce heat to medium-low and continue to cook until potatoes are tender, about 12 to 15 minutes.
  4. Transfer potatoes to a colander; drain and wash with cold water.
  5. Let cool 5 minutes.
  6. Using the smooth side of a meat tenderizer, smash each potato to a 1/2-inch thickness.
  7. Heat olive oil in the griddle pan.
  8. Add thyme and continue to cook for 2 more minutes.
  9. Working in batches, cook the smashed potatoes, turning once, until browned and crispy; about 3 minutes on each side. Add more olive oil if needed.
  10. Transfer potatoes to a serving plate, season with salt and pepper, and immediately sprinkle with parmesan cheese; allow to melt.
  11. Add chopped fresh parsley and serve.
