Ingredients

  • 4 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 3 cups HOT milk
  • 1 teaspoon salt
  • fresh ground pepper , to taste
  • 1/2 teaspoon grated nutmeg

Instructions

  1. Begin by melting the butter over medium-low heat.
  2. Once melted, whisk in the flour; whisk until all lumps have disappeared and the mixture turns a light brown color, about 5 minutes.
  3. Add the hot milk, a little bit at a time, and continue to whisk until smooth; bring to a boil and cook for 8 minutes, stirring constantly, or until sauce is thickened.
  4. Remove from heat.
  5. Stir in salt, pepper and nutmeg.
  6. Set aside until ready to use.
