Ingredients
1-1/2cupsquick cooking rolled oats
1cupshredded coconut flakes
1cupdried cherries
1/2cupdark chocolate chips
1/2cupto 3/4 cups cashew butter or all natural peanut butter
1/4cuphoney
1/4teaspoonpure vanilla extract
Instructions
In a large mixing bowl, combine oats, shredded coconut, dried cherries, chocolate chips, cashew butter OR peanut butter, honey, and vanilla.
Using a sturdy rubber spatula, mix and stir until thoroughly combined.
Chill mixture in the fridge for 30 minutes.
Remove from fridge and form into balls.
Place back in the fridge for 20 minutes.
Remove from fridge and serve.
Notes
Start with 1/2-cup of nut-butter, but add more nut-butter only if mixture seems dry while shaping it into balls. Cook Time = Chill Time. 1 cookie = 31 grams (1.10 ounces)
