Ingredients
FOR THE SALAD
1heart of romaine lettuce, chopped
1bag(6-ounces) fresh baby spinach
4cupstorn kale leaves, packed
1pear, chopped
1/2-cupred raisins
1cuphalved grape tomatoes
1small red onion, thinly sliced
4to 6 mini sweet peppers, julienned
1cupcrumbled feta
1avocado, peeled, pitted and diced
1/2-cuptoasted almonds
FOR THE DRESSING
1/2cupextra-virgin olive oil
1/2cuplemon juice
1/2cupred-wine vinegar
1/4cupDijon mustard
4small cloves garlic, minced
salt and fresh ground pepper, to taste
Instructions
FOR THE SALAD
Arrange lettuce, kale and spinach on a large serving plate or a large salad bowl.
Top with chopped pears, raisins, tomatoes, onions, sweet peppers, feta, avocado, and toasted almonds. Set aside.
FOR THE DRESSING
Combine oil, lemon juice, vinegar, mustard and garlic in a bowl and whisk until smooth and well combined.
Season with salt and pepper.
Drizzle over salad.
Taste for seasoning and adjust accordingly.
Let stand in fridge for 10 minutes.
Serve.
