Ingredients
4boneless, skinless chicken breasts
⅓cupall-purpose flour
¼cuppanko crumbs
2clovesgarlic,minced, or use 1/2 teaspoon garlic powder
¼cupgrated parmesan cheese
½tablespoonItalian Seasoning
salt and freshly ground black pepper,to taste
¼cupskim milk,or any milk that you have on hand
3tablespoonsolive oil
4slicespart-skim mozzarella cheese
10 to 12pepperoni slices
1cuphalved cherry tomatoes
Instructions
Preheat oven to 400˚F.
In a ziplock bag, combine the flour, panko crumbs, garlic, parmesan cheese, Italian seasoning, salt, and pepper.
Pour the milk into a bowl.
Dip the chicken breasts in the milk, transfer to the bag with the panko crumb mixture, and toss to coat.
Heat the olive oil in a large oven-safe skillet.
Remove the chicken pieces from the bag and add them to the skillet.
Cook for 1 to 2 minutes on one side; flip over and continue to cook for 1 more minute or until lightly browned.
Place the skillet in the oven and bake for 10 minutes; flip over the chicken and continue to bake for 8 minutes.
Remove from oven; place the mozzarella cheese slices over each chicken breast, top with pepperoni slices, and halved tomatoes.
Place back in the oven and bake for 6 to 8 more minutes or until the cheese is melted.
Remove from oven and let stand for 5 minutes before serving.
