Ingredients

  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground ginger
  • zest of 1 lemon
  • 1/2 cup honey
  • 3/4 cup vegetable oil
  • 1/2 cup Sprite

Instructions

  1. Preheat oven to 350.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and ginger; mix well and set aside.
  3. In a separate mixing bowl combine the honey, vegetable oil, and sprite.
  4. Pour the wet ingredients into the dry ingredients and mix until you get a shiny cookie dough.
  5. Drop the cookie dough by the spoonful onto a lightly greased baking sheet.
  6. Bake for 12 to 15 minutes, or until golden brown.
  7. Remove cookies from oven and let stand on baking sheets for a couple of minutes before transferring to wire racks.
  8. Cool completely.
  9. Serve with a cup of coffee or tea.
