Chocolate Butterscotch Cookies

Ingredients

  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 3 tablespoons butter
  • 1 cup semi-sweet chocolate chips
  • 2 eggs
  • 1/2 cup sugar
  • 2 teaspoons vanilla extract
  • 1 cup butterscotch chips

Instructions

  1. Preheat oven to 350.
  2. In a medium-sized bowl sift together the flour and baking powder; set aside.
  3. Place the butter and the chocolate chips in a small saucepan and heat over medium heat until melted and smooth. Set aside.
  4. Crack the eggs in a large mixing bowl, add in the sugar and vanilla.
  5. With the electric mixer on medium speed, beat the mixture for 10 minutes, or until pale and creamy.
  6. Stir the flour mixture into the egg mixture.
  7. Fold in the melted chocolate followed by the butterscotch chips. Let stand for 10 minutes.
  8. Line two baking sheets with parchment paper.
  9. Drop dough by rounded tablespoonfuls, about 2 inches apart.
  10. Bake for 9 to 11 minutes, or until dry and cracked.
  11. Cool on trays.
