You'll only need boneless, skinless chicken thighs and a few other simple ingredients to make this easy recipe.

Season the Chicken


Season the chicken with olive oil, salt, pepper, garlic powder, smoked paprika, and lime juice.

Bake the Chicken


Arrange it on a baking sheet lined with aluminum foil and bake at 425 degrees F for 25 minutes.

Rest and Slice


Allow the chicken to rest for 5 to 10 minutes before slicing it into strips. Then roast the onion and bell peppers.

Make the Dressing


Blend the cilantro, garlic, jalapeno, lime juice, sour cream, salt, and pepper until smooth.

Assemble the Salad


Divide the Romain, roasted veggies, corn, beans, cherry tomatoes, and cilantro mixture evenly among 4 plates, and top with chicken.
