Creamy & Satisfying!
Melt the butter in a large pan, then add the olive oil, onions, and bell peppers and cook until soft.
Mix the chicken into the pan, then add the seasonings and mix well to combine.
Pour in the two canned soups and the canned tomatoes. Stir to combine, then remove from heat.
Arrange 1/3 of the tortillas in the baking dish, and top with 1/3 of the chicken mixture and 1/3 of the cheese.
Add two more layers, ending with cheese. Bake for 25-30 minutes, until cheese is melted and bubbly.
Let the casserole sit for 8-10 minutes, then cut and serve. This hearty dish is a meal on its own!
