WHAT IS A HIBACHI?

Technically, a hibachi is a small charcoal grill.  However, hibachi chicken in a restaurant is made on a hot, flat griddle called a "teppanyaki."  At home, a large skillet or wok, or a big preheated griddle will achieve the same result.
