Generously season the meat with salt and pepper to taste on all sides. Then set it aside.
Heat olive oil in a large pan and cook the meat until browned on all sides. Then remove from pan and set aside.
Add butter to the same pan and melt completely. Gently scrape the bottom of the pan with a wooden spoon.
