Season the chicken with salt and pepper and set aside.
Combine the eggs, pickle juice, mustard and seasonings in a shallow dish. Whisk gently.
Place the breadcrumbs in a shallow bowl, and the flour in a third shallow bowl.
Dip each chicken cutlet in the flour, then the egg, followed by the breadcrumbs. Place on a plate.
Coat the air fryer basket with cooking spray and cook two cutlets at a time. Air fry at 400 degrees for 5 minutes per side.
Serve the crispy chicken on buns, in lettuce cups, or with your favorite sides.
