You'll only need bacon, potato, and a few other simple ingredients to make this easy recipe.
Heat bacon over medium heat until crispy and drain excess fat on paper towel-lined plate.
Cook the onions for 5 minutes, then stir in the potatoes and cook for 7-10 minutes until tender.
Crumble bacon and add it to the pan. Then add the eggs and scramble. Cook for 3-5 minutes or until done to taste.
Spread two tortillas with refried beans, cheese, and scrambled eggs mixture. Then place remaining tortillas on top.
Spray pan with cooking spray and cook each quesadilla for 2-3 per side, until golden and crispy.
Transfer them to a plate, slice them in quarters, and dig in. Enjoy!
