Stir fry the chicken in a heated wok for about 7-8 minutes.
Whisk together the chicken stock, soy sauce, oyster sauce, sesame oil, rice vinegar, garlic, and cornstarch.
Add the bell peppers and onions to the wok, and cook about 3 minutes.
Pour in the sauce and cook until it begins to thicken, about 3 minutes.
Add the cashews and the green onions, and toss until the ingredients are well combined.
