Hi, you guys!! It’s FRIDAY! *insert “jazz-hands”*

Apparently, we’re quickly approaching Fall. It’s barely 65-degrees around hurr… What is wrong with this climate?! Ugh. It’s only mid-August and I’m grabbing a sweater to go outside. Boohoo!

So, I had every intention to bring you some Friday-pie, buuuut we had a change of plans.
Someone misplaced their memory card, and since I can’t just give you words without photos, said pie will have to wait.

Also… I went to my mom’s, again, and raided her vegetable garden. Again. I got tomatoes, zucchini, cucumbers, banana peppers, and strawberries. My grocery bill is half of what it normally is. Cha-Ching!!

I’ve noticed that everyone is ready to pass off bushels of zucchini like it ain’t no thang. I know zucchini multiply like rabbits, but come on! My dad was like, here, take these 10 bags of zucchini, you’ll need them for your blog! Really?! I would have to blog about zucchini all year long just to get rid of  them all! Which, by the way, I have a recipe with zucs for this Sunday. #sorrynotsorry #itssogood

My parents were just as quick about giving me tons of their tomatoes. Luckily, we like them things, A LOT! Roasted Tomato Soup (yummmmers!), Quinoa and Spinach Stuffed Tomatoes (oh YES! can’t wait!), and Hashbrowns, Spinach and Tomato Pie for Sunday mornin’ brunch! And! And and and… one more Tomato Crumble for my Mom.

As if roasted tomatoes weren’t enough, I threw some deeeelicious crumbs on top, grabbed a bottle of Chardonnay in my hand, and ate half of what you see, while relaxing on my back porch. I don’t slow down to relax very often, but this was totally perfect. You jelly? Don’t be! Go make this Tomato Crumble, grab your favorite wine, then eat and drink outside! Or!  Or you could plop down in front of the TV and watch Friends-reruns. Maybe Three’s Company is your thing?? It definitely IS mine!

Ingredients
  

For the Filling
  • 3 tablespoons olive oil
  • 2 yellow onions , sliced
  • 1/8 teaspoon salt
  • 3 garlic cloves , minced
  • 2 pounds grape or cherry tomatoes
  • 3 fresh basil leaves , cut into thin ribbons
  • salt and fresh ground pepper , to taste
For the Topping
  • 1-1/3 cup flour
  • 1 teaspoon baking powder
  • salt and fresh ground pepper , to taste
  • 1 stick (8 tablespoons) butter, melted
  • 1/2 cup shredded parmesan cheese

Instructions
 

  • Preheat oven to 375.
  • Heat olive oil in a skillet over medium heat.
  • Add onions and season with salt; cook for 3 minutes, or until translucent.
  • Stir in minced garlic and continue to cook for 1 more minute, or until fragrant.
  • Remove from heat;
  • Add tomatoes, basil, salt and pepper to skillet; toss to combine
  • Pour the tomato mixture into a baking dish.
  • Bake for 20 minutes.
  • In the meantime, prepare topping.
  • In a small mixing bowl combine flour, baking powder, salt, pepper, and melted butter.
  • Mix with wooden spoon until crumbly.
  • Remove the tomato filling from the oven and add topping over tomatoes.
  • Sprinkle with parmesan cheese.
  • Return to oven and bake for 15 minutes, or until top is golden brown and mixture is bubbly.
  • Remove from oven.
  • Let cool for 15 minutes.
  • Serve.

  1. I made this for dinner tonight and it came out great! I cut it in half, since I only had 1 pound of tomatoes. I further cut back on the amount of crumble topping, just by a little, to make it lighter. I used about 1/2 cup flour and 2 1/2 tablespoons of butter. This was tasty, easy, and I would definitely make it again. Thanks for the great recipe.

    I’ve never thought to make a savory crumble before, but I’m really loving tomatoes at the moment so this just look perfect!

  3. Haha, Im glad Im not the only one getting piles of squash and other veggies this year! However, Im cheap, so free veggies are a win! This tomato crumble looks like a perfect way to use some up ;D
