Bo is one of their favorites. They love to jump around with her, dance, and repeat everything she says. I enjoy that show as well because Bo gets them to move around – she’s very positive, energetic, and she encourages the viewers to help out on her quests.

This past weekend we set a couple of hours aside to spend with the kids and watch one of their favorite movies, 101 Dalmatians, on Netflix. Even the one-year old stayed up and watched the first 30 minutes of it. Now she picks up her stuffed animals and barks at them. Ana, on the other hand, keeps drawing dogs with spots. And she wants me to get her a puppy.

I told her I would give her the entire batch of S’mores Brownie Cookies, instead. She agreed.

By the end of the movie, the 3 of us ate more than half of the batch. I transformed the outside, campfire treat into an indoor, brownie cookie sandwich. It was mahvelous! I mean, you can imagine, right?

S’mores Brownie Cookies

Donna Hay's Brownie Cookies are made with graham crackers, then topped with toasted marshmallows.
Servings : 24 servings
Prep Time 20 mins
Cook Time 10 mins
Total Time 30 mins

Ingredients
  

  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 2/3 cup ground graham crackers + 2 tablespoons for garnish (optional)
  • 3 tablespoons butter
  • 2 cups semi-sweet chocolate chips , chopped
  • 1/2 cup sugar
  • 2 teaspoons pure vanilla extract
  • 2 eggs
  • 1 cup miniature marshmallows
  • Chocolate Syrup (optional)

Instructions
 

  • Preheat oven to 350.
  • In a medium-sized bowl sift together the flour and baking powder; stir in ground graham crackers and set aside.
  • Place the butter and the chocolate chips in a small saucepan and heat over medium heat until melted and smooth. Set aside.
  • Crack the eggs in a large mixing bowl, add in the sugar and vanilla.
  • With the electric mixer on medium speed, beat the mixture for 10 minutes, or until pale and creamy.
  • Stir the flour mixture into the egg mixture.
  • Fold in the melted chocolate.
  • Let stand for 10 minutes.
  • Line two baking sheets with parchment paper.
  • Drop dough by rounded tablespoonfuls, about 2 inches apart.
  • Bake for 9 to 11 minutes, or until dry and cracked.
  • Remove from oven and top each cookie with marshmallows.
  • Set broiler on high.
  • Broil for 2 minutes, or until marshmallows slightly brown and begin to melt.
  • Remove from oven and top with reserved graham crackers and chocolate syrup.
  • Let cool.
  • Serve.
  • For a fun twist, sandwich cookies together so that the marshmallows are inside the sandwich.

    Thank goodness for movies! And brownie s’mores! My boys are 14 and 16 and there are many days when we still all need some wind down and alone time. Will have to make these the next time (i.e. like today) we need a break!
