Yes, you read that correctly – I made these cookies in the Kitchens at General Mills! So incredibly cool! Right?!
About two weeks ago I had one of the better experiences of my life. One, I got to meet and spend time with some of the most amazing bloggers – people I had only known through my computer screen were suddenly in the same room with me. They were all so creative and so inspiring; such a blessing to have been there!

Secondly, I spent those days with my bloggy-friends at the Headquarters of General Mills!
You guys… this place was gigantanormous! I would need two months just to learn how to get around there. They have numerous kitchens, offices, conferences, photo studios, prop rooms, food courts, hair studios(!), etc… I can’t even explain just how excited I was to be there. However, if you asked the wonderful people that work there about me, they would probably tell you that I (and my seriously awesome bloggy friend, Joan) was probably the most enthusiastic person they had ever met. I was like a little kid in a toy store – I just couldn’t get enough of it all. I wanted to take it all in. I wanted to live in the moment and realize just how great this opportunity was.
Then there was the people of Pillsbury… OH me, OH MY! Very humble and SO inviting. The coordinator, Jess, and her wonderful team were the nicest, most talented people I have met.
The day we arrived, we were taken to a local, fun and posh restaurant where we got to meet everyone, including Jess, Serena and Kate from Pillsbury, as well as my favorite bloggers.
Um. I also enjoyed a delicious steak dinner and a healthy slice of the best Tiramisu on the planet. Lawd, that was SO good!
The next morning we headed to General Mills for a day of cooking, baking, photographing and a whole lot of chatting.
My partner-in-crime, the wonderful Joan from Chocolate Chocolate and More, and I teamed up and made some wonderful goodies such as the million dollar Loaded Baked Potato Pinwheels which I will blog about in the coming weeks, and a couple of cookies recipes, such as the Gingerbread-Turtle Thumbprint Cookies that I practically inhaled before the end of the day.
At this time I also made these Rocky Road White Chocolate Chip Peppermint Sugar Cookies. We were challenged to take one of Pillsbury’s refrigerated cookie dough and create our own cookie recipe with it. Since I like cookies with a lot of crunch and sweetness, I chose to take the Peppermint Sugar Cookie Dough and just load it up with marshmallows, coconut, chocolate chips and walnuts.
Do I have to tell you just how good these are?! Can you imagine! I was so happy with the way they turned out that I made them again just as soon as I got back home. I froze half the batch for Christmas Day and basically destroyed the other half before the end of the day.
After all that cooking and baking, we headed to their Photo Studio to learn a bit more about food photography. I will blog more in depth about this in the coming weeks, but I would like to mention that I learned so much about styling and photographing food, including how to cut brownies correctly and how to create beautiful shadows. Incredibly helpful! I am looking forward to using all their suggestions. #1. Focus on the food. A.K.A. Less props. #2. Focus on the food. 😉
Go pick up a roll of their Peppermint Sugar Cookie Dough and make these cookies, like, now. Or yesterday? It’s not too late. It’s never too late for cookies.

Rocky Road White Chocolate Chip Peppermint Sugar Cookies
Ingredients
- 1 roll (30-ounces) Pillsbury Peppermint Sugar Cookie Dough
- 1/2 cup all-purpose flour
- 1 cup white chocolate chips
- 2 cups mini marshmallows
- 1 cup sweetened shredded coconut
- 1 cup semi-sweet chocolate chips
- 1 cup chopped walnuts
- melted chocolate for drizzling
Instructions
- Preheat oven to 350.
- Line cookie sheets with foil or parchment paper; set aside.
- Crumble cookie dough in a large mixing bowl; add flour and mix until well incorporated.
- Knead in white chocolate chips.
- Shape dough into 1-inch balls and place on cookie sheets, 2-inches apart.
- Bake for 10 minutes.
- In the meantime, combine marshmallows, shredded coconut, chocolate chips and walnuts in a mixing bowl.
- Take out the cookies and immediately top each cookie with a generous amount of the rocky road mixture.
- Bake for additional 2 minutes, or until marshmallows puff-up.
- Remove from oven and let cool on baking sheets for 2 minutes.
- Transfer to wire racks and cool completely.
- Drizzle with melted chocolate.
- Serve.

Cookies are my weakness-the patients at my work kept bringing them in and I kept eating them, at least for a good past two weeks! This looked like fun!
